Blender Brownies- Gluten and refined sugar free

BLACK BEAN BROWNIES
From ‘super healthy kids’ blog

1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 Tbsp oil
1/2 cup cocoa powder
1/4 tsp salt
3 tsp vanilla extract
1 tsp baking powder (for more cake-like brownies)
1/2-3/4 cup sweetener of your choice (honey, sugar, agave, etc)
 
Preheat oven to 350 degrees F. Grease your pan.
Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract and sweetener in a blender; blend until smooth.
Pour the mixture into the prepared baking dish.
Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 25- 35 minutes.
 
Brienne’s note:
These brownies are already quite moist, but to make them even moister, more portable and just totally cute, bake them in little mason jars! I’ve tried this myself, and discovered that the moisture was sealed inside the jar when I put on the lid. Simply follow the above recipe, and fill your mason jars no more than to the bottom edge of the lid, leaving about an inch and a half of space left at the top of the jar. Don’t worry if your brownies rise above the jar when baking, mine puffed up quite a lot, but they easily squish back into the jar when you put the lids on. Enjoy!
