Crunchy Cocoa Date Truffles: dairy and refined sugar free!

Crunchy Cocoa Date Truffles: dairy and refined sugar free!

1 cup your choice of nuts or seeds (walnuts, almonds, cashews, sunflower or pumpkin seeds)
1 cup dates
2-3 tbsp cocoa powder (to taste)
1-2 tbsp honey (to taste)
1/2 tsp vanilla extract

Combine all ingredients in a food processor until mixture has formed a paste-like consistency.
Using a tablespoon as a guide, scoop some of the mixture and roll into balls. Place on a baking sheet, tray or plate.
Repeat until you’ve used all the mixture (about 20 truffles).
Place the tray in the refrigerator until the truffles set, about an hour, then transfer to a sealed container. Will keep in the refrigerator for up to one week.

 

Brienne’s note:

These truffles are very easy to roll into balls and are quite sticky. They would be great if coated in any topping of your choice: shredded coconut, chopped nuts, whatever sticks! Also, make sure there’s room in your fridge for the tray of truffles prior to starting the recipe…Enjoy!
