Vegan Banana Coconut Freezer Fudge
4 tablespoons melted coconut butter (or homemade coconut butter)
1/2 a large, very-ripe banana (80g)
1/8 to 1/4 tsp cinnamon
Honey or Agave to taste
Put all the above ingredients into a blender and liquefy. Then smooth it into a container. (Plastic containers work well, because you can pop the fudge right out.) Place in the freezer until frozen to desired consistency. Wait until the fudge has frozen before cutting into pieces.
I personally like to double this recipe, otherwise the fudge doesn’t last very long before it all gets eaten! I made this fudge for a party and realized that the fudge starts to melt after about ten minutes sitting out. I suggest storing it in the freezer as much as possible, but even if the fudge does melt it can always be refrozen again and still taste fantastic! Enjoy!
