Muscle Up Salad
9 oz flank steak
Salt and Pepper
2 plum tomatoes cut into eighths
¼ cup of sliced onion
1 small clove of garlic – crushed
5 cups of chopped romaine lettuce
1 small cucumber sliced
4 Tbsp low-fat balsamic vinaigrette
3 Tbsp crumbled blue cheese
Preheat a skillet or grill pan on medium high heat
Salt and pepper both sides of the steak
Cook for 5-6 minutes on each side depending on thickness and how rare you want it. Let it rest for about 5 minutes. Slice it diagonally across the grain into thin strips.
Mix the tomatoes, onion, lettuce, garlic, cucumber and steak in a large bowl
Pour on the vinaigrette and toss well to completely cover with dressing
Makes two servings. Place the serving on a plate and top with the blue cheese.
